  • Salt and pepper, to taste
  • 1 cup shredded Gruyère cheese Or your favorite melting cheese
  • Fresh parsley, chopped For garnish

Preparation
  1. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook slowly, stirring frequently, until the onions are golden brown and caramelized, about 15-20 minutes.
  2. Once the onions are caramelized, add the balsamic vinegar and dried thyme. Stir well, allowing the flavors to combine for another 1-2 minutes.
  3. Pour in the vegetable or beef broth and bring to a boil. Add the rice, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender.
  4. Once the rice is cooked, stir in the shredded Gruyère cheese until melted. Check for seasoning and add salt and pepper to taste.
  5. Scoop your Savory French Onion Soup Rice into bowls, garnish with fresh parsley, and serve immediately!

Notes

Caramelizing onions properly is key! For a unique twist, add some sautéed mushrooms or spinach for extra nutrition and flavor. If you have leftovers, store them in an airtight container in the fridge for 3-4 days and reheat with a splash of broth or water.
