- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook slowly, stirring frequently, until the onions are golden brown and caramelized, about 15-20 minutes.
- Once the onions are caramelized, add the balsamic vinegar and dried thyme. Stir well, allowing the flavors to combine for another 1-2 minutes.
- Pour in the vegetable or beef broth and bring to a boil. Add the rice, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender.
- Once the rice is cooked, stir in the shredded Gruyère cheese until melted. Check for seasoning and add salt and pepper to taste.
- Scoop your Savory French Onion Soup Rice into bowls, garnish with fresh parsley, and serve immediately!
Notes
Caramelizing onions properly is key! For a unique twist, add some sautéed mushrooms or spinach for extra nutrition and flavor. If you have leftovers, store them in an airtight container in the fridge for 3-4 days and reheat with a splash of broth or water.
