- In a medium saucepan, heat the beef broth over medium heat until it starts to simmer.
- If you choose to add onions, slice them and sauté in a bit of oil or butter over medium heat until golden brown, about 5-7 minutes.
- Slice the French rolls or baguettes down the middle and lightly toast them in the oven for about 5 minutes, until slightly crispy.
Assembly
- Layer sliced roast beef generously into each toasted roll.
- If using sautéed onions and Swiss cheese, add them on top of the beef.

- Serve each sandwich with a small bowl of warm beef broth or au jus for dipping.
