  • 1 lb boneless, skinless chicken breasts
  • 1 piece bell pepper (any color), sliced
  • 1 medium red onion, sliced
  • 1 cup corn (fresh or frozen)
Marinade
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • to taste Salt
  • to taste Pepper
Optional toppings

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Slice your bell pepper and red onion, and set them aside.
Marinating Chicken
  1. In a mixing bowl, combine the olive oil, chili powder, cumin, garlic powder, salt, and pepper. Add the chicken breasts, ensuring they are completely coated in the marinade. Let them soak in the flavor while you prepare the veggies.
Assembling Packets
  1. Tear off four large sheets of aluminum foil. Place a portion of the chicken in the center of each sheet, followed by an equal amount of the bell pepper, onion, and corn.
Sealing and Baking
  1. Fold the sides of the foil over the chicken and veggies, sealing them tightly to create packets.
  2. Place the packets on a baking sheet and bake for about 25 minutes. The chicken should reach an internal temperature of 165°F (75°C).
Serving
  1. Carefully open the packets (watch out for steam!) and serve with your favorite toppings like fresh cilantro, avocado, or a squeeze of lime.

Notes

For substitutions, you can use Halal turkey breasts or tofu for a vegetarian option. Make sure to seal the foil packets tightly to avoid moisture loss.
