  • 2 cans canned salmon, drained and flaked
  • 1 cup breadcrumbs can be seasoned or plain
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 2 large eggs
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 teaspoon dried dill weed or fresh, if available
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the flaked salmon, breadcrumbs, diced onion, diced celery, eggs, mayonnaise, Dijon mustard, lemon juice, dill weed, and salt and pepper. Mix until well blended.
  3. Shape the salmon mixture into a loaf and place it in a greased loaf pan, pressing down gently.
  4. Bake for 25-35 minutes or until golden brown on top and cooked through.
  5. Allow the salmon loaf to cool for a few minutes before slicing and serving.

Notes

Serve with tartar sauce or a squeeze of lemon. Store leftovers in an airtight container in the fridge for up to three days or freeze individual slices for up to three months.
