Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the shredded rotisserie chicken, cream of chicken soup, and chicken broth. Mix well until incorporated.
- Stir in the mixed vegetables, garlic powder, onion powder, salt, and pepper. Adjust seasoning according to your taste.
- In another bowl, prepare the stuffing mix according to the package instructions.
- Fold the stuffing into the chicken mixture until evenly coated.
Baking
- Transfer the mixture into a greased 9x13-inch baking dish, spreading it out evenly.
- If desired, sprinkle shredded cheese on top.
- Bake in the preheated oven for 25-30 minutes or until the casserole is bubbly and golden on top.
- Let the casserole cool for a few minutes before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F until heated through, about 15-20 minutes.
