Preparation
  1. Rinse the raw pumpkin seeds under cold water to remove any pumpkin pulp and pat them dry with a clean kitchen towel.
  2. Preheat your oven to 300°F (150°C).
  3. In a mixing bowl, combine the cleaned pumpkin seeds with olive oil or melted butter, add salt and any optional seasonings, and toss for an even coating.
  4. Line a baking sheet with parchment paper or lightly grease it, then spread the seasoned seeds in a single layer.
Roasting
  1. Bake in the preheated oven for about 20-25 minutes, stirring halfway through to prevent burning and ensure even roasting.
Cooling and Storage
  1. Once roasted, remove from the oven and allow the seeds to cool completely before enjoying or storing them in an airtight container.

Notes

For extra crunch, soak the seeds in saltwater for about 30 minutes before roasting. Store roasted seeds in an airtight container for up to a week at room temperature or in the refrigerator for longer freshness.
