  • 2 pieces delicata squash Sliced in half and seeds removed
  • 1 piece onion, thinly sliced
  • 2 tablespoons olive oil Plus more for drizzling
  • to taste Salt and pepper
  • 1/2 cup breadcrumbs
  • 1 tablespoon fresh herbs (such as thyme or rosemary) For garnish

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the delicata squash in half lengthwise, scoop out the seeds, and cut each half into half-moon shapes, about 1-inch wide.
  3. In a large bowl, toss the squash with olive oil, salt, and pepper to coat evenly.
  4. In a separate bowl, combine the sliced onions with a pinch of salt and let them sit for a few minutes.
Cooking
  1. Arrange the squash on a baking sheet in a single layer, then top with the onions and breadcrumbs. Drizzle with a touch more olive oil.
  2. Roast in the preheated oven for approximately 20-25 minutes until tender and golden.
  3. Once roasted, sprinkle fresh herbs over the top before serving.
  4. Plate your Roasted Delicata Squash with Crispy Onions, and serve.

Notes

For substitutions, you may use butternut squash or acorn squash if delicata isn't available. Avoid overcrowding the baking sheet for even cooking.
