Preparation
- Preheat your oven to 400°F (200°C).
- Carefully cut the butternut squash in half lengthwise, scoop out the seeds, and peel the skin using a vegetable peeler. Cut the squash into bite-sized cubes.
Seasoning
- In a large bowl, combine the butternut squash cubes with olive oil, salt, pepper, and any desired spices. Toss them well to coat evenly.
Roasting
- Spread the seasoned squash pieces on a baking sheet lined with parchment paper. Make sure they’re in a single layer for proper roasting.
- Bake in the preheated oven for 25-30 minutes or until the squash is tender and slightly caramelized, flipping halfway through.
Serving
- Remove from the oven and let cool slightly. Enjoy warm or toss into salads or grain bowls.
Notes
For perfect results, cut squash cubes uniformly for even roasting. Experiment with various herbs and spices for different flavors. Leftovers can be stored in an airtight container for up to 5 days.
