  • 1 cup cherry tomatoes, halved
  • 1 can butter beans, drained and rinsed
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Method

Preparation
  1. Start by washing the cherry tomatoes and slicing them in half. Drain and rinse the butter beans thoroughly under cold water.
Cooking
  1. Heat the olive oil in a large skillet over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.

  3. Gently stir in the rinsed butter beans and season with salt and pepper to taste. Cook for an additional 3-5 minutes until warmed through.
Serving
  1. Spoon the mixture into a serving dish and add dollops of ricotta on top. Garnish with fresh basil.
  2. Gather your loved ones and dig into this delightful dish!

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to 3 days. Reheat on the stove over low heat or microwave in short intervals. For longer storage, freeze for up to 3 months, though the texture may change slightly.
