Ingredients
  

Cheese Mixture
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1-2 pieces jalapeños, minced Adjust the heat by adding more or fewer jalapeños.
Breading and Frying
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs Toast the breadcrumbs for extra flavor.
  • 2 pieces eggs, beaten
  • to taste salt and pepper
  • for frying cooking oil

Method
 

Preparation
  1. In a large mixing bowl, combine the shredded Monterey Jack cheese, shredded cheddar cheese, and minced jalapeños. Mix them until well incorporated.
  2. Take a small portion of the cheese-pepper mixture and roll it into bite-sized balls. Place them on a plate.
Breading
  1. In one bowl, place the flour, in another, toast the breadcrumbs, and in a third, put the beaten eggs to create your assembly line for breading.
  2. Roll each cheese ball first in the flour, then dip it in the beaten eggs, and finally coat it with breadcrumbs. Make sure they're fully covered for that perfect crunch!
Frying
  1. Heat your cooking oil in a deep pan over medium heat. Once hot, carefully add a few cheese bites at a time and fry until they are golden brown and crispy, about 2-3 minutes.
  2. Remove the bites from the oil and let them drain on paper towels to absorb excess oil.
Serving
  1. Once cooled slightly, serve your Rattlesnake Bites with a side of creamy ranch or your favorite dipping sauce. Enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. To reheat, pop them in the oven or an air fryer at 350°F (175°C) for about 10 minutes.
