Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar White sugar can be used as a substitute.
  • 1/2 cup butter, melted Ensure you use a Halal-friendly brand.
  • 1/2 teaspoon salt
For the raspberry filling
  • 2 cups fresh raspberries
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, oats, brown sugar, melted butter, and salt. Mix until crumbly and well combined.
  3. Press about two-thirds of the crumb mixture into the bottom of an 8×8-inch baking pan to form the crust.
  4. In a separate bowl, mix the fresh raspberries, cornstarch, and lemon juice. Optionally, add a bit of sugar for a sweeter filling.
  5. Spread the raspberry mixture over the crust evenly.
  6. Crumble the remaining crumb mixture on top of the raspberries until they are mostly covered.
  7. Bake in the preheated oven for about 25 to 30 minutes, or until the top is golden brown.
  8. Let the bars cool completely in the pan before cutting them into squares.

Notes

For best results, let bars cool completely before slicing to prevent the filling from spilling. Can be stored in the refrigerator for up to five days or frozen for up to three months.
