Ingredients
  

Main Ingredients
  • 4 whole whole wheat wraps
  • 1 cup hummus
  • 1 cup cucumber, sliced
  • 1 cup red bell pepper, sliced
  • 1/2 cup red onion, thinly sliced
  • 2 cups fresh spinach
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method
 

Preparation
  1. Prepare all your fresh ingredients. Slice the cucumber and bell pepper, and thinly slice the red onion. Rinse and pat dry the spinach.
Building the Wrap
  1. Take one whole wheat wrap and spread about 1/4 cup of hummus in the center, leaving space around the edges.
  2. Layer your sliced cucumbers, red bell peppers, and red onion on top of the hummus.
  3. Sprinkle a generous handful of spinach over the veggies, followed by crumbled feta cheese.
  4. Add a drizzle of olive oil and a splash of lemon juice. Season with salt and pepper to taste.
Wrapping
  1. Fold in the sides of the wrap and roll it tightly from the bottom up. Ensure that all the goodies stay inside as you wrap.
Serving

Notes

Substitutions: Spinach can be substituted with arugula or kale. Different cheeses like goat cheese can also be used for unique flavors. Prep your veggies ahead to make cooking easier and avoid overloading the wrap.
