  • 1/4 cup olive oil Extra virgin olive oil is recommended.
  • 2 tablespoons lemon juice Freshly squeezed for best flavor.
  • 2 cloves garlic, minced Can substitute with garlic powder if needed.
  • 1 teaspoon dried oregano Oregano adds a nice depth of flavor.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Freshly cracked is preferred.
Main Ingredients
  • 4 pieces boneless, skinless chicken breasts Ensure they are uniform in size for even cooking.

Preparation
  1. In a bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  2. Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
Cooking
  1. Heat your grill to medium-high heat.
  2. Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
  3. Remove the chicken from the grill and let it rest for 5 minutes before slicing.
Serving
  1. Serve warm with your favorite sides like salad, grilled vegetables, or creamy potato salad.

Notes

Don't over-marinate the chicken as the acidity from the lemon juice can change the texture. Let the chicken rest after grilling for juicier meat.
