Preparation
- In a bowl, combine diced chicken with soy sauce, minced garlic, and ginger. Let it marinate for about 10-15 minutes while you prepare your veggies.
Cooking
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Once the oil is hot, add the marinated chicken to the pan. Cook for about 5-7 minutes until the chicken is cooked through and golden brown. Remove from the pan and set aside.
- In the same pan, add the bell pepper, broccoli, and snap peas. Stir-fry for about 3-4 minutes until just tender but still crisp.
- Return the chicken to the pan with the veggies. Toss everything together for an additional minute, allowing the flavors to meld.
- Serve hot over cooked rice or noodles, sprinkling sesame seeds on top, if desired.
Notes
Make sure to have all your ingredients prepped before you start cooking. For a variation, you can customize the vegetables according to the season. If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
