Ingredients
  

For the marinade
  • 2 pieces boneless, skinless chicken breasts, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
For the stir-fry
  • 1 piece bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame seeds (optional) for garnish
  • Cooked rice or noodles for serving

Preparation
  1. In a bowl, combine diced chicken with soy sauce, minced garlic, and ginger. Let it marinate for about 10-15 minutes while you prepare your veggies.
Cooking
  1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  2. Once the oil is hot, add the marinated chicken to the pan. Cook for about 5-7 minutes until the chicken is cooked through and golden brown. Remove from the pan and set aside.
  3. In the same pan, add the bell pepper, broccoli, and snap peas. Stir-fry for about 3-4 minutes until just tender but still crisp.
  4. Return the chicken to the pan with the veggies. Toss everything together for an additional minute, allowing the flavors to meld.
  5. Serve hot over cooked rice or noodles, sprinkling sesame seeds on top, if desired.

Notes

Make sure to have all your ingredients prepped before you start cooking. For a variation, you can customize the vegetables according to the season. If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
