Preparation
  1. Start by slicing the blood oranges in half, and carefully sectioning out the fruit from the peel. Set the sections aside in a bowl.
  2. Cut the avocados in half, remove the pit, and scoop the flesh out using a spoon. Dice them into bite-sized pieces and add to the bowl with the blood oranges.
  3. Finely chop the red onion and cilantro. Sprinkle them over the avocado and orange mixture in the bowl.
  4. In a separate bowl, whisk together the lime juice and olive oil with some salt and pepper. Adjust seasonings to taste.
  5. Pour the dressing over the salad and gently toss everything together, being careful not to mash the avocados.
  6. Plate the salad and enjoy its bright colors and refreshing flavors right away.

Notes

For the freshest taste, prepare this salad just before serving—avocados can brown quickly. If blood oranges are unavailable, substitute with cara cara or regular oranges. Avoid overmixing to maintain ingredient integrity.
