  • Salt and pepper, to taste
  • 2 cups mixed vegetables (carrots, bell peppers, broccoli)

Preparation
  1. In a large bowl, combine chicken pieces, olive oil, garlic powder, onion powder, paprika, cumin, salt, and pepper. Toss until the chicken is evenly coated.
Cooking
  1. Heat a large skillet over medium-high heat. Once hot, add the chicken to the pan, ensuring not to overcrowd.
  2. Cook for about 7-10 minutes, stirring occasionally, until the chicken is golden brown and cooked through (it should reach an internal temperature of 165°F).
  3. Once the chicken is fully cooked, add the mixed vegetables to the skillet. Stir them in and continue to cook for an additional 5 minutes or until they are tender yet crisp.
Serving
  1. Remove the skillet from heat. Serve your flavorful chicken and vegetable mixture over rice or quinoa, and garnish with fresh herbs or lemon if desired.

Notes

For a vegetarian twist, substitute the chicken with firm tofu or chickpeas, marinating them in the same spices. Ensure your skillet is hot enough before adding the chicken to achieve that beautiful sear. Avoid crowding your skillet while cooking the chicken; if necessary, cook in batches to promote even cooking and crispiness. Refrigerate leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
