Ingredients
  

For the Mascarpone Mixture
  • 1 cup heavy cream
  • 8 oz mascarpone cheese
  • 1/2 cup powdered sugar
  • 1/2 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
For the Coffee and Layering
  • 1 cup strong brewed coffee, cooled Ensure coffee is cooled to retain ladyfingers' crispiness.
  • 1 pack ladyfinger cookies
For Garnish
  • to taste cocoa powder For dusting.
  • to taste ground cinnamon For garnish.

Method
 

Preparation of the Mascarpone mixture
  1. In a medium bowl, whip the heavy cream until it holds stiff peaks.
  2. Carefully fold in the mascarpone cheese, powdered sugar, pumpkin puree, and pumpkin pie spice until fully combined.
  3. Avoid overmixing to maintain an airy texture.
Prepare Coffee
  1. Brew your coffee and let it cool.
  2. Ensure the coffee is not too hot to retain the crispiness of the ladyfingers.
Layering
  1. Quickly dip each ladyfinger into the cooled coffee for just a second; avoid soaking.
  2. Layer dipped ladyfingers in an 8x8 inch dish, covering the bottom.
  3. Spread half of the pumpkin mascarpone mixture over the ladyfingers.
  4. Add another layer of dipped ladyfingers on top and finish with the remaining pumpkin cream.
  5. Smooth the top for a neat appearance.
Chill
  1. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight.
  2. This helps the flavors meld together.
Serve
  1. Before serving, dust the top with cocoa powder and sprinkle ground cinnamon.
  2. Cut into squares and serve chilled.

Notes

For the best flavor, let the tiramisu chill overnight. Avoid soaking the ladyfingers for too long to maintain texture. Can be stored in the refrigerator for up to 3 days, or frozen for up to 1 month.
