  • 1 cup raw pumpkin seeds (pepitas) Look for raw, unsalted seeds for best flavor.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese Freshly grated is recommended.
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional) For a spicy kick.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. If using fresh pumpkin seeds, rinse them under cold water to remove pulp and pat dry.
Mixing and Baking
  1. In a mixing bowl, combine pumpkin seeds, olive oil, minced garlic, Parmesan cheese, salt, black pepper, and red pepper flakes. Toss until evenly coated.
  2. Line a baking sheet with parchment paper. Spread the seasoned pumpkin seeds in a single layer.
  3. Bake in the preheated oven for about 10-15 minutes, stirring every 5 minutes, until golden brown and aromatic.
Cooling and Serving
  1. Remove from oven and let cool before enjoying or storing.
  2. Serve as a snack or topping for salads and soups.

Notes

Store leftovers in an airtight container at room temperature for up to a week or refrigerate for a month. They also freeze well.
