Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the pumpkin puree, melted butter, brown sugar, granulated sugar, egg, and vanilla extract. Whisk until well blended.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add this dry mixture to the wet mixture, stirring until combined.
- Fold in the rolled oats and chocolate chips until evenly distributed.
Baking
- Drop rounded balls of dough onto a lined baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10–12 minutes or until the edges are slightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
To keep cookies fresh, store in an airtight container at room temperature for up to a week. They can be frozen for up to three months.
