  1. Blend oats in a blender or food processor until they reach a flour-like consistency.
  2. In a large bowl, combine the blended oats, cottage cheese, eggs, vanilla extract, baking powder, and a pinch of salt. Stir until the mixture is well combined; it should be a smooth batter.
  3. Preheat your waffle maker according to the manufacturer’s instructions.
  4. Pour the batter into your preheated waffle iron, using approximately 1/2 cup of batter for each waffle. Close the lid and cook until golden brown (usually about 3-5 minutes).
  5. Carefully remove the waffles and serve them hot with your favorite toppings.
