  • 1 cup black beans, drained and rinsed Can substitute with chickpeas.
  • 1/2 cup peanut butter or almond butter Sun butter can be used for nut allergies.
  • 1/4 cup honey or maple syrup Adjust sweetness to taste.
  • 1/4 cup cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional) Adds delicious pockets of chocolate.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, combine the rinsed black beans, peanut butter, honey, cocoa powder, baking powder, and salt. Blend until smooth and creamy.
  3. Gently fold in the chocolate chips using a spatula.
  4. Lightly grease a baking dish or line it with parchment paper.
  5. Drop small amounts of the batter into the prepared dish.
  6. Bake for about 20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool for about 10 minutes before cutting into squares.

Notes

For optimal texture, do not overbake. Store in an airtight container in the refrigerator for up to a week or freeze individually for up to three months. Microwave for 10-15 seconds to enjoy later.
