  • 1 cup black beans, drained and rinsed Can substitute with pinto or chickpeas.
  • 2 pieces ripe bananas
  • 1/3 cup cocoa powder
  • 1/4 cup honey or maple syrup Use maple syrup for vegan option.
  • 1/4 cup peanut butter or almond butter
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips (optional) Fold in gently for extra chocolaty bites.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a blender or food processor, combine the black beans, ripe bananas, cocoa powder, honey or maple syrup, peanut butter or almond butter, vanilla extract, baking powder, and salt. Blend until the mixture is smooth and creamy.
  3. If using dark chocolate chips, fold them in gently with a spatula after blending.
  4. Lightly grease an 8x8-inch baking dish or line it with parchment paper for easy removal.
  5. Pour the brownie batter into the prepared dish, spreading it evenly in the pan.
  6. Place the dish in the preheated oven and bake for 20-25 minutes, until the edges appear set and a toothpick inserted into the center comes out mostly clean.
  7. Allow the brownies to cool in the pan for about 10-15 minutes before slicing into bite-sized pieces.

Notes

Store in an airtight container in the refrigerator for up to one week, or freeze with parchment paper between layers. Microwave for a few seconds to reheat.
