Ingredients
  

Fresh Ingredients
  • 1 medium cucumber, diced Wash thoroughly and cut in half lengthwise before dicing.
  • 1 cup fresh pineapple chunks Canned pineapple can be used if preferred.
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro or mint, chopped Choose one or both for added flavor.
  • 1 Juice of lime Fresh lime juice is recommended.
  • Salt and pepper to taste

Method
 

Preparation
  1. Wash the cucumber thoroughly. Cut it in half lengthwise, scoop out the seeds if you prefer, and then dice it into bite-sized pieces.
  2. Chop the fresh pineapple into cubes or use pre-cut pineapple.
Mixing
  1. In a large mixing bowl, combine the diced cucumber, pineapple chunks, and finely chopped red onion.
  2. Sprinkle the chopped cilantro or mint into the bowl.
Dressing
  1. Squeeze the lime juice over the salad, ensuring everything gets an even coating.
  2. Add salt and pepper to taste.
Serving
  1. Gently toss all the ingredients together, making sure everything is well mixed.
  2. If you have time, let the salad chill in the refrigerator for 10-15 minutes before serving.

Notes

Use ripe ingredients for the best flavors. Don't skip the lime juice to balance the sweetness of the pineapple. Store in an airtight container for up to 2 days, but best enjoyed fresh.
