Preparation
- Preheat your oven to 350°F (175°C) to ensure even baking.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt. Set aside.
- In a larger bowl, cream the softened butter with granulated and brown sugars until light and fluffy (about 3–4 minutes).
- Mix in the pumpkin puree, egg, and vanilla extract, blending until combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix!
- If using, gently fold in chopped nuts or chocolate chips.
Baking
- Drop spoonfuls of dough onto a lined baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a healthier twist, consider substituting half of the all-purpose flour with whole wheat flour or using almond butter instead of regular butter. Store in an airtight container at room temperature for about a week, or freeze for up to three months.
