  • to taste teaspoon salt and pepper Essential for seasoning.

Method

Preparation
  1. Preheat your oven to 450°F (232°C).
  2. In a small bowl, combine minced garlic, rosemary, thyme, olive oil, salt, and pepper to make the rub.
  3. Pat the prime rib dry with paper towels and rub the spice mixture all over the roast.
Cooking
  1. Place the roast bone-side down in a roasting pan and roast in the preheated oven for 20 minutes.
  2. After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue cooking until the internal temperature reaches your desired doneness (about 115°F for rare, 125°F for medium rare, and 135°F for medium).
  3. Remove the roast from the oven and let it rest for at least 20 minutes.
  4. Carve the prime rib into thick slices, serve with Au Jus or your favorite sides.

Notes

Let the prime rib come to room temperature for about an hour before cooking to ensure even cooking. Use a meat thermometer to avoid overcooking and always allow it to rest before slicing for the juiciest results.
