- Pat the beef tenderloin dry with paper towels.
- Mix together the salt, crushed peppercorns, Dijon mustard, Worcestershire sauce, and minced garlic in a small bowl.
- Rub the mixture all over the tenderloin.
Searing and Roasting
- Heat the olive oil in a large skillet over medium-high heat.
- Sear the beef on all sides until golden brown, about 2-3 minutes per side.
- Transfer the seared beef to a roasting pan and roast for about 20-25 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.
Serving
- Remove the tenderloin from the oven and let it rest for at least 10 minutes.
- Slice the tenderloin and garnish with fresh herbs before serving.
Notes
For substitutions, feel free to use crushed garlic or other herbs instead of whole peppercorns. Remember to monitor oven times as they can vary by size and thickness of meat. Avoid skipping the resting time for optimal juiciness.
