  • 1 cup raw pumpkin seeds (pepitas) Make sure they are raw for best results.
  • 1 tablespoon olive oil This helps in roasting the seeds and adding flavor.
  • 1 teaspoon sea salt Adjust to taste.
  • as needed optional optional toppings (e.g., garlic powder, paprika, cinnamon and sugar) Customize the flavors to your liking.

Method
 

Preparation
  1. Preheat your oven to 300°F (150°C).
  2. Scoop out the seeds from a pumpkin and rinse them under cold water, removing any strings or guts. Pat them dry with a kitchen towel.
  3. In a bowl, toss the seeds with olive oil and sea salt. Add any other seasonings you like.
  4. Arrange the seasoned seeds in a single layer on a baking sheet.
Roasting
  1. Roast the seeds in the preheated oven for 20-25 minutes, stirring occasionally to prevent burning. They should become golden brown and crispy.
  2. Remove the seeds from the oven and let them cool before enjoying.

Notes

Store in an airtight container at room temperature for up to a week, or freeze for longer storage. Let sit out for a bit to enjoy again after freezing.
