Ingredients

For the dough
  • 2 cups all-purpose flour
  • 4 tablespoons oil (plus more for deep frying)
  • 1/2 teaspoon salt
  • as needed Water for forming dough
For the filling
  • 2 cups mixed vegetables (potatoes, peas, carrots)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • to taste Salt

Method

Preparation
  1. In a large mixing bowl, combine all-purpose flour, salt, and 4 tablespoons of oil. Mix until the flour resembles breadcrumbs. Gradually add water until you form a smooth dough. Cover with a damp cloth and let it rest for at least 30 minutes.
Cooking the Filling
  1. In a pan, heat about 2 tablespoons of oil. Add cumin seeds and let them sizzle. Add mixed vegetables and a pinch of salt, cooking until they soften (around 5-7 minutes). Stir in coriander powder and garam masala. Mix well and remove from heat.
Forming the Samosas
  1. Divide the rested dough into equal portions and roll into balls. Roll out each ball into thin circles (about 6 inches in diameter). Cut each circle in half to make two semi-circles. Fold one semi-circle into a cone shape and seal the edge with water. Fill the cone with the vegetable mixture, then seal the open edge with water to secure the filling. Repeat with remaining dough.
Frying the Samosas
  1. Heat oil in a deep frying pan over medium heat. Add prepared samosas in batches and fry until golden brown and crispy (about 5-7 minutes). Remove and place on paper towels to drain excess oil.
Serving
  1. Enjoy your Perfect Crispy Indian Samosas hot, paired with mint or tamarind chutney!

Notes

For a twist, add paneer or lentils as filling. Do not rush the dough resting stage for better texture. Ensure oil is hot before frying to avoid sogginess. Store leftovers in an airtight container for up to 3 days or freeze for a month. Reheat in the oven at 350°F for 10-15 minutes.
