For the Cobbler Base
  • 1 cup unsalted butter (melted) Ensure the butter is melted but not boiling.
  • 2 cups granulated sugar
  • 1 cup all-purpose flour
  • 1 cup milk Use non-dairy milk for a dairy-free version.
  • 4 large eggs
  • 1 tbsp vanilla extract Don't skimp on the vanilla for flavor.
  • 1 tbsp baking powder
  • 1 pinch salt
For the Topping
  • 1 cup chopped pecans Use fresh pecans for the best flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x13-inch baking dish with cooking spray or butter.
  3. In a large mixing bowl, whisk together melted butter, sugar, flour, and milk until smooth. Then, add the eggs one by one, mixing well after each addition.
  4. Stir in the vanilla extract and a pinch of salt.
  5. Gently fold in the chopped pecans.
  6. Pour the batter into the prepared baking dish and spread it evenly.
Baking
  1. Bake in the preheated oven for about 45-50 minutes or until the top is golden and a toothpick inserted comes out clean.
  2. Allow the cobbler to cool for a few minutes before serving.
  3. Serve warm, optionally topped with a scoop of vanilla ice cream or whipped cream.

Notes

For the best texture, do not overmix the batter. Store leftovers in an airtight container for up to 4 days, or freeze for up to 2 months.
