  • 1/2 cup peanut butter or any nut butter of your choice
  • 1/4 cup honey or maple syrup
  • 1/4 cup protein powder plant-based or whey
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup chopped nuts or dairy-free chocolate chips optional

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the rolled oats, protein powder, and salt. Stir to mix well.
  3. In a separate bowl, mix the peanut butter, honey (or maple syrup), and vanilla extract until smooth.
  4. Gradually add the wet mixture to the dry ingredients, stirring until fully combined. If using nuts or chocolate chips, fold them in now.
  5. Line a muffin tin with liners or grease it with cooking spray.
  6. Spoon or scoop the mixture into the muffin tin, filling each cup about 3/4 full.
  7. Bake for about 20 minutes or until the edges are golden brown and a toothpick inserted comes out clean.
  8. Let the cups cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Notes

Consider using natural peanut butter with no added sugars or oils. These cups can be customized with various toppings. They can be frozen for up to 3 months and stored in the refrigerator for up to 5 days.
