  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup Can substitute with any preferred sweetener.
  • 1/4 cup protein powder
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup chocolate chips (optional)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with cooking spray or muffin liners.
  2. In a large mixing bowl, combine the rolled oats, peanut butter, honey or maple syrup, protein powder, milk, vanilla extract, and salt. Stir well until all ingredients are perfectly mixed; you should have a thick, sticky mixture.
  3. If you're opting for chocolate chips, fold them in now for that extra touch of sweetness.
  4. Scoop the mixture into the muffin tin, filling each cup about three-quarters full to allow for rising.
  5. Place the muffin tin in the oven and bake for 15-20 minutes, or until the tops are golden brown.
  6. Let them cool in the tin for a few minutes before transferring to a wire rack. Enjoy them warm or store for later!

Notes

Customize your ingredients by substituting almond or cashew butter for peanut butter, and keep an eye on the bake time to avoid overbaking. Store in an airtight container; refrigerate for up to a week or freeze for up to three months.
