- Prep your workspace: Gather all your ingredients and prepare a baking sheet by lining it with parchment paper.
- Combine the wet ingredients: In a medium saucepan, combine the creamy peanut butter, granulated sugar, and milk. Stir over medium heat until the mixture comes to a gentle boil.
- Add vanilla and salt: Once boiling, remove the saucepan from the heat and mix in the vanilla extract and a pinch of salt.
- Mix in the oats and chocolate: Stir in the quick oats until fully combined. Then, add the chocolate chips and mix until evenly distributed.
- Form the cookies: Using a tablespoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet.
- Let them cool: Allow the cookies to cool on the baking sheet for at least 30 minutes, or until set but still soft.
Notes
Store in an airtight container for up to 5 days at room temperature. Refrigerate for up to a week or freeze wrapped in plastic for longer storage. Reheat by letting them sit at room temperature or microwaving briefly.
