  • 1 cup unsalted butter, softened Ensure butter is at room temperature
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour Sifted
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup milk Whole milk recommended
  • 2 cups fresh peaches, diced Can substitute with canned peaches if fresh ones are unavailable
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ¼ cup brown sugar (for topping) Mix with a sprinkle of cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 10-inch bundt pan or two loaf pans.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 5 minutes.
  4. Add the eggs one at a time, beating well after each addition.
  5. In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the creamed mixture, alternating with the milk, starting and ending with the flour mixture until just combined.
  7. Fold in the diced peaches, vanilla extract, and cinnamon carefully.
  8. In a small bowl, mix the brown sugar with a sprinkle of cinnamon for the topping.
Baking
  1. Pour the batter into the prepared pan and sprinkle the topping mixture over the cake.
  2. Bake in the preheated oven for approximately 50-60 minutes or until a toothpick inserted into the center comes out clean.
  3. Allow the cake to cool in the pan for about 15 minutes, then transfer it to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for about a week. For longer storage, freeze slices wrapped tightly for up to 3 months. Reheat in the microwave or oven as desired.
