Ingredients
  

Main Ingredients
  • 8 oz pasta (your choice) Any pasta works; consider whole grain or gluten-free options.
  • 2 cups fresh spinach (washed and chopped) Can substitute with other leafy greens like kale or arugula.
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Parmesan cheese for topping (optional)

Method
 

Cooking the Pasta
  1. In a large pot of boiling salted water, cook the pasta according to the package instructions until al dente. Reserve about a cup of pasta water before draining the pasta.
Sautéing the Garlic
  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Be careful not to let it burn!
Adding Spinach
  1. Stir in the spinach and cook for 2-3 minutes until wilted.
Making the Sauce
  1. Pour in the heavy cream and reduce heat to low. Stir until the mixture is smooth, then season with salt and pepper to taste.
Combining Pasta and Sauce
  1. Add the drained pasta to the creamy spinach sauce, tossing to coat evenly. If the sauce is too thick, add a bit of the reserved pasta water until you achieve your desired consistency.
Serving
  1. Dish out the pasta into bowls and sprinkle with parmesan cheese, if desired. Enjoy immediately while it's warm and delicious!

Notes

If you have leftovers, store in an airtight container for up to 3 days. To reheat, gently warm it up in the microwave or on the stovetop, adding a splash of cream or water to revive the sauce’s creaminess.
