Sweet Potato Medallions
  • 2 medium sweet potatoes, peeled and sliced into 1/4-inch medallions
Seasoning and Coating
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme or your herb of choice
  • to taste salt and pepper
  • optional Fresh parsley for garnish

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Peel the sweet potatoes and cut them into 1/4-inch thick medallions.
  3. In a large mixing bowl, combine sweet potato medallions with olive oil, garlic powder, thyme, salt, and pepper. Toss until coated.
  4. Lay the seasoned sweet potato medallions in a single layer on a parchment-lined baking sheet.
  5. Sprinkle the grated Parmesan cheese evenly over the sweet potato medallions.
Baking
  1. Bake in the oven for 20-25 minutes, or until edges are crispy and golden brown.
  2. Remove from the oven and garnish with fresh parsley if desired. Enjoy warm!

Notes

For an extra crispy finish, try broiling the medallions for the last 2-3 minutes of baking. You can experiment with different herbs or spices.
