Ingredients
  

Sweet Potato Medallions
  • 2 large large sweet potatoes, peeled and sliced into ½ inch thick medallions
Coating and Seasoning
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • optional Fresh parsley or thyme, for garnish

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Grab a baking sheet and line it with parchment paper for easy clean-up!
  2. Slice the sweet potatoes into about ½ inch thick medallions. Try to keep them roughly the same size for even cooking.
  3. In a large mixing bowl, combine the olive oil, garlic powder, onion powder, oregano, salt, and pepper. Toss in the sweet potato medallions and mix until they are well-coated.
Cooking
  1. Spread the medallions in a single layer on the prepared baking sheet. This allows them to roast properly and achieve that beautiful golden color.
  2. Sprinkle the grated Parmesan cheese evenly over the sweet potato medallions.
  3. Bake in the preheated oven for about 25-30 minutes, flipping them halfway through to ensure even cooking. Bake until they are crispy on the outside and tender on the inside.
  4. Once out of the oven, garnish with fresh herbs if desired, and serve warm.

Notes

For a crispier finish, give the medallions an additional 5 minutes in the oven, but keep an eye on them.
