Preparation
- Preheat your oven to 425°F (220°C). Grab a baking sheet and line it with parchment paper for easy clean-up!
- Slice the sweet potatoes into about ½ inch thick medallions. Try to keep them roughly the same size for even cooking.
- In a large mixing bowl, combine the olive oil, garlic powder, onion powder, oregano, salt, and pepper. Toss in the sweet potato medallions and mix until they are well-coated.
Cooking
- Spread the medallions in a single layer on the prepared baking sheet. This allows them to roast properly and achieve that beautiful golden color.
- Sprinkle the grated Parmesan cheese evenly over the sweet potato medallions.
- Bake in the preheated oven for about 25-30 minutes, flipping them halfway through to ensure even cooking. Bake until they are crispy on the outside and tender on the inside.
- Once out of the oven, garnish with fresh herbs if desired, and serve warm.
Notes
For a crispier finish, give the medallions an additional 5 minutes in the oven, but keep an eye on them.
