Preparation
- Preheat your oven to 400°F (200°C).
- Place the cubed eggplant on a baking sheet. Drizzle with 2 tablespoons of olive oil, and season with salt and pepper. Toss to coat evenly, then spread in a single layer.
Cooking
- Roast the eggplant in the preheated oven for 20 minutes, stirring halfway through until golden and tender.
- While the eggplant is roasting, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions with a pinch of salt, and sauté for approximately 10-15 minutes until soft and caramelized, stirring occasionally.
- Cook the pasta according to package instructions until al dente, then drain and set aside.
- Once the eggplant is done, add it to the skillet with caramelized onions along with the garlic and tomatoes. Sauté everything together for about 2-3 minutes, allowing the flavors to meld.
- Finally, add the cooked pasta to the skillet, tossing gently to combine. Taste and adjust seasoning if necessary.
- Plate your delicious pasta and garnish with fresh basil if desired. Enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to 2 months. To reheat, microwave for a few minutes or warm gently on the stovetop with a splash of olive oil.
