Preparation
- Preheat your oven to 400°F (200°C).
- Wash the delicata squash thoroughly and cut each in half lengthwise.
- Scoop out the seeds with a spoon; no need to peel.
- Cut each half into half-moon shapes about 1/2-inch thick.
- In a large bowl, combine the squash pieces with olive oil, salt, pepper, and any additional seasonings you prefer, tossing until evenly coated.
- Arrange the seasoned squash pieces in a single layer on a baking sheet.
Cooking
- Place the baking sheet in the preheated oven and roast for 25-30 minutes, flipping halfway through.
- Remove from oven once the squash is golden brown and easily pierced with a fork.
Serving
- Serve warm, adjusting seasoning as necessary.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to three months. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
