  • 2 medium delicata squash
  • 2 tablespoons olive oil Can substitute with avocado oil.
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon garlic powder Optional for added flavor.
  • 1 teaspoon paprika Optional for added flavor.
  • fresh herbs Optional for additional seasoning.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash the delicata squash thoroughly and cut each in half lengthwise.
  3. Scoop out the seeds with a spoon; no need to peel.
  4. Cut each half into half-moon shapes about 1/2-inch thick.
  5. In a large bowl, combine the squash pieces with olive oil, salt, pepper, and any additional seasonings you prefer, tossing until evenly coated.
  6. Arrange the seasoned squash pieces in a single layer on a baking sheet.
Cooking
  1. Place the baking sheet in the preheated oven and roast for 25-30 minutes, flipping halfway through.
  2. Remove from oven once the squash is golden brown and easily pierced with a fork.
Serving
  1. Serve warm, adjusting seasoning as necessary.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to three months. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
