Ingredients

Main Ingredients
  • 2 lbs chicken thighs (boneless and skinless, cut into bite-sized pieces)
  • 1 cup orange juice (freshly squeezed is ideal)
  • 1/4 cup soy sauce (ensure it’s Halal)
  • 1/2 cup honey
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch (mixed with 2 tablespoons of water to thicken)
  • Salt and pepper (to taste)
  • Sesame seeds and sliced green onions (for garnish)

Method

Preparation
  1. Begin by cutting the chicken thighs into bite-sized pieces. Season them with a sprinkle of salt and pepper for added flavor.
  2. In a bowl, combine the orange juice, soy sauce, honey, minced garlic, grated ginger, and sesame oil. Whisk until well blended.
  3. Place the chicken pieces in the crockpot, then pour the sauce mixture over them, ensuring that the chicken is evenly coated.
  4. Set the crockpot on low heat for about 4 to 6 hours or on high heat for 2 to 3 hours, depending on your schedule.
  5. About 30 minutes before serving, stir in the cornstarch mixture to thicken the sauce.
  6. Once done, give the chicken a good mix, then top with sesame seeds and sliced green onions before serving!

Notes

Substitutions: Feel free to swap chicken thighs for chicken breasts. Timing is essential to avoid overcooked chicken. Avoid adding too much salt due to the soy sauce.
