  • 12 oz smoked sausage, sliced
  • 12 oz pasta (penne or rotini)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper diced (any color)
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (like mozzarella or cheddar)

Method
 

Preparation
  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 3-4 minutes.
  2. Toss in the diced onion, bell pepper, and minced garlic. Sauté until the veggies soften, about 4-5 minutes.
  3. Stir in the pasta, diced tomatoes (with juices), chicken broth, and salt and pepper. Bring the mixture to a boil.
  4. Reduce the heat to a low simmer, cover the pot, and cook for about 10-12 minutes or until the pasta is al dente, stirring occasionally.
  5. Once the pasta is cooked, stir in the heavy cream and shredded cheese until melted and creamy. Taste and adjust seasoning as needed.
  6. Garnish with fresh parsley and serve warm. Enjoy your delightful meal!

Notes

For a lighter option, substitute turkey or chicken sausage. If you prefer a vegan version, plant-based sausage works wonderfully. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
