- In a large pot, heat a drizzle of olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 3-4 minutes.
- Toss in the diced onion, bell pepper, and minced garlic. Sauté until the veggies soften, about 4-5 minutes.
- Stir in the pasta, diced tomatoes (with juices), chicken broth, and salt and pepper. Bring the mixture to a boil.
- Reduce the heat to a low simmer, cover the pot, and cook for about 10-12 minutes or until the pasta is al dente, stirring occasionally.
- Once the pasta is cooked, stir in the heavy cream and shredded cheese until melted and creamy. Taste and adjust seasoning as needed.
