  • 1 lb chicken breast, diced
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 medium onion, diced
  • 4 cups chicken broth
Dumpling Ingredients
  • 2 cups biscuit mix
  • 3/4 cup milk
  • 1 tsp garlic powder
  • 1 tsp thyme
  • Salt and pepper to taste

Preparation
  1. Start by heating a large pot over medium heat. Add a splash of oil and sauté the diced onion, chopped carrots, and celery until they soften, around 5-7 minutes.
  2. Once the vegetables are tender, add the diced chicken breast to the pot. Season with salt, pepper, garlic powder, and thyme. Sauté for another 5-7 minutes until the chicken is cooked through.
Cooking
  1. Mix the sautéed chicken and vegetables with 4 cups of chicken broth. Allow this mixture to come to a gentle boil.
  2. In a separate mixing bowl, combine the biscuit mix and milk. Stir until a soft dough forms, but be careful not to overmix.
  3. Once the broth is boiling, drop spoonfuls of the dumpling mixture on top of the broth. Cover the pot and let it simmer for about 10-15 minutes, or until the dumplings are cooked through and fluffy.
