  • 3 pieces ripe bananas, mashed The riper, the better!
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar Adjust to your sweetness preference
  • 1 large egg, beaten
  • 1 cup all-purpose flour
  • 1/2 cup nuts or chocolate chips (optional) For added flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mash the ripe bananas using a fork and stir in the melted butter.
  3. Mix in the vanilla extract, baking soda, and salt. Then, add the sugar and the beaten egg, stirring until mixed thoroughly.
  4. Gently fold in the flour until just combined. If desired, fold in nuts or chocolate chips.
Baking
  1. Pour the batter into a greased 4×8-inch loaf pan and bake for about 60 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

For serving, consider adding butter or honey, and pair with fresh fruit or coffee. Store in plastic wrap or foil for up to 2 days at room temperature, or refrigerate for up to a week. Freeze for longer storage.
