Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, mash the ripe bananas using a fork and stir in the melted butter.
- Mix in the vanilla extract, baking soda, and salt. Then, add the sugar and the beaten egg, stirring until mixed thoroughly.
- Gently fold in the flour until just combined. If desired, fold in nuts or chocolate chips.
Baking
- Pour the batter into a greased 4×8-inch loaf pan and bake for about 60 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
Notes
For serving, consider adding butter or honey, and pair with fresh fruit or coffee. Store in plastic wrap or foil for up to 2 days at room temperature, or refrigerate for up to a week. Freeze for longer storage.
