- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
- In a skillet, add a drizzle of olive oil over medium heat. Cook the shrimp until they turn pink and opaque, about 2-3 minutes per side. Remove from heat and let them cool.
- In a large bowl, combine the cherry tomatoes, cucumber, and red onion. Toss gently to mix.
- In the same bowl, add the cooled pasta, shrimp, crab meat, mayonnaise, lemon juice, and fresh parsley. Season with salt and pepper to taste. Gently fold all the ingredients together until well combined.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
