Preparation
- Preheat your oven to 350°F (175°C) and lightly grease or line a 9x13-inch baking pan with parchment paper.
- In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until creamy.
- Incorporate the eggs one at a time, mixing well after each addition, then add vanilla extract and mix again.
- In a separate bowl, whisk together flour, baking soda, and salt, then gradually add this dry mixture to the wet mixture, stirring until just blended.
- Gently fold in the oats and raisins until evenly distributed in the batter.
- Spread the batter evenly into the prepared baking pan.
Baking
- Bake in the preheated oven for about 25 minutes or until the edges are golden brown and a toothpick comes out clean from the center.
- Remove from the oven and allow to cool for at least 15 minutes before slicing into bars.
Notes
Store in an airtight container at room temperature for up to a week. These bars can also be refrigerated for longer freshness, and can be reheated in the microwave for a few seconds before serving.
