Ingredients
  

Dry ingredients
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
Wet ingredients
  • 1/2 cup unsalted butter, softened Can substitute with dairy-free margarine
  • 1 large egg
  • 1 tsp vanilla extract
Mix-ins
  • 1 cup chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine rolled oats, all-purpose flour, brown sugar, granulated sugar, baking soda, and salt.
  3. In another bowl, beat the softened butter until creamy; then gradually add the sugars, mixing until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and blend until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Fold in the chocolate chips until evenly distributed.
Baking
  1. Using a cookie scoop or spoon, drop heaping tablespoons of dough onto a lined baking sheet.
  2. Bake for 10-12 minutes, or until the edges are light golden brown.
Cooling
  1. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to one week, or freeze for up to three months. To reheat, microwave for 10-15 seconds.
