Ingredients
  

Wet Ingredients
  • 1 cup butter, softened Can substitute with coconut oil for a dairy-free option.
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups rolled oats Quick oats can be substituted, but rolled oats give a chewier texture.
  • 1 cup chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened butter, brown sugar, and granulated sugar. Beat until the mixture is light and fluffy.
  3. Crack in the two eggs, and pour in the vanilla extract. Mix until everything is well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, stirring until combined. Next, fold in the rolled oats and chocolate chips.
Baking
  1. Using a cookie scoop or spoon, drop dough balls onto an ungreased baking sheet, about 2 inches apart.
  2. Bake in your preheated oven for 10-12 minutes, until the edges are lightly golden.
Cooling
  1. Once baked, remove from the oven and let the cookies cool slightly on the baking sheet before transferring them to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to a week or freeze for up to three months. To enjoy, thaw at room temperature or microwave for a few seconds.
