Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the softened butter, brown sugar, and granulated sugar. Beat until the mixture is light and fluffy.
- Crack in the two eggs, and pour in the vanilla extract. Mix until everything is well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring until combined. Next, fold in the rolled oats and chocolate chips.
Baking
- Using a cookie scoop or spoon, drop dough balls onto an ungreased baking sheet, about 2 inches apart.
- Bake in your preheated oven for 10-12 minutes, until the edges are lightly golden.
Cooling
- Once baked, remove from the oven and let the cookies cool slightly on the baking sheet before transferring them to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to a week or freeze for up to three months. To enjoy, thaw at room temperature or microwave for a few seconds.
