  • 4 cups Vegetable broth
  • 2 cloves Garlic, minced
  • 1 tablespoon Fresh ginger, grated About 1 tablespoon
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 1 handful Spinach or bok choy (optional) For added color
  • Salt and pepper to taste
For the Wontons
  • 1 package Wontons (store-bought or homemade)
  • 8 ounces Shiitake mushrooms, sliced
  • 2 stalks Green onions, chopped (for garnish)

Method
 

Preparation of the Broth
  1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing for about 1-2 minutes until fragrant.
  2. Pour in the vegetable broth and bring to a gentle simmer.
  3. Toss in the sliced shiitake mushrooms and let them cook in the broth for about 5 minutes.
Cooking the Wontons
  1. Gently add the wontons to the simmering broth. They typically only take about 5-7 minutes to cook, so keep an eye on them!
  2. Stir in the soy sauce, and season with salt and pepper to your preference.
  3. If using, throw in a handful of fresh spinach or bok choy to add a vibrant pop of color.
Serving
  1. Ladle the soup into bowls, garnishing with fresh green onions. Enjoy your nourishment while it’s hot!

Notes

Substitutions: You can use other mushrooms like portobello or button. Swap soy sauce for tamari for a gluten-free option. For best results, don’t overcook the wontons to maintain a tender texture. Avoid adding too many wontons at once to prevent lowering the broth's temperature.
