Preparation of Pumpkin Mixture
  1. In a large mixing bowl, combine the pumpkin puree, mascarpone cheese, heavy cream, powdered sugar, vanilla extract, and pumpkin spice.
  2. Using a hand mixer or a whisk, beat the mixture on medium speed until it becomes light and fluffy, about 2-3 minutes.
Soaking Ladyfingers
  1. In a shallow dish, pour the cooled coffee or espresso.
  2. Quickly dip each ladyfinger into the coffee for just a second—make sure not to soak them, or they’ll become overly soggy.
Layering the Dessert
  1. In a rectangular dish or individual serving glasses, start layering the dessert.
  2. Begin with a layer of soaked ladyfingers, followed by a generous amount of the pumpkin mixture.
  3. Repeat the layers until you run out of ingredients, finishing with the pumpkin mixture on top.
Final Touches
  1. Before serving, dust the top layer of pumpkin filling with cocoa powder to add elegance and enhance the flavors.
Chilling
  1. Cover the dish with plastic wrap and refrigerate for at least 4-6 hours, or overnight for best results.

Notes

Consider using Halal-certified mascarpone or whipping cream for substitutions. Don’t oversoak the ladyfingers to avoid mushiness. This dessert can be stored in an airtight container for up to 3 days, or frozen for up to 2 months.
