- In a large mixing bowl, combine the peanut butter and honey until smooth.
- Gradually mix in the rolled oats, stirring until all the oats are well-coated.
- Fold in the chocolate chips, vanilla extract, and a pinch of salt if using.
- Line an 8×8 inch baking dish with parchment paper for easy removal.
- Transfer the mixture into the dish, pressing it down firmly and evenly.
- Cover the dish with plastic wrap and refrigerate for about 2 hours, or until firm.
- Once chilled and set, cut into squares and serve.
Notes
Store bars in an airtight container in the refrigerator for up to a week. For longer storage, freeze individual bars wrapped tightly for up to three months.
