  • 1/2 cup honey or maple syrup Maple syrup can be used for a vegan option.
  • 2 cups rolled oats Use old-fashioned rolled oats for best texture.
  • 1/2 cup chocolate chips Optional, can be omitted or replaced with other add-ins.
  • 1/2 teaspoon vanilla extract Enhances the flavor.
  • a pinch salt Balances the sweetness.

Preparation
  1. In a large mixing bowl, combine the peanut butter and honey until smooth.
  2. Gradually mix in the rolled oats, stirring until all the oats are well-coated.
  3. Fold in the chocolate chips, vanilla extract, and a pinch of salt if using.
  4. Line an 8×8 inch baking dish with parchment paper for easy removal.
  5. Transfer the mixture into the dish, pressing it down firmly and evenly.
  6. Cover the dish with plastic wrap and refrigerate for about 2 hours, or until firm.
  7. Once chilled and set, cut into squares and serve.

Notes

Store bars in an airtight container in the refrigerator for up to a week. For longer storage, freeze individual bars wrapped tightly for up to three months.
