Prepare the Cheese Sauce
- In a medium saucepan over medium heat, combine the cream cheese and milk. Stir until completely melted and integrated, about 3-5 minutes.
Add the Cheddar Cheese
- Gradually whisk in the shredded cheddar cheese until melted and creamy. Add sliced jalapeños if desired and simmer for another 2-3 minutes.
Bake the Tortilla Chips
- Preheat the oven to 350°F (175°C). Spread tortilla chips on a baking sheet and bake for about 5-7 minutes until crispy.
Assemble the Nachos
- Remove the chips from the oven and drizzle the creamy cheese sauce generously on top.
Garnish and Serve
- Add a dollop of sour cream and sprinkle chopped green onions on top. Serve immediately.
