Ingredients

  • 4 oz cream cheese Use full-fat cream cheese for best results.
  • 1/2 cup milk Adjust consistency with more or less milk.
  • 1 cup shredded cheddar cheese Feel free to substitute with pepper jack for extra flavor.
  • 1/4 cup sliced jalapeños Optional, for an added kick.
For the Nachos
  • 2 cups tortilla chips Choose thick chips that can hold the cheese.
  • Sour cream Sour cream For serving, add a dollop.
  • Chopped green onions Chopped green onions For garnish.

Method
 

Prepare the Cheese Sauce
  1. In a medium saucepan over medium heat, combine the cream cheese and milk. Stir until completely melted and integrated, about 3-5 minutes.
Add the Cheddar Cheese
  1. Gradually whisk in the shredded cheddar cheese until melted and creamy. Add sliced jalapeños if desired and simmer for another 2-3 minutes.
Bake the Tortilla Chips
  1. Preheat the oven to 350°F (175°C). Spread tortilla chips on a baking sheet and bake for about 5-7 minutes until crispy.
Assemble the Nachos
  1. Remove the chips from the oven and drizzle the creamy cheese sauce generously on top.
Garnish and Serve
  1. Add a dollop of sour cream and sprinkle chopped green onions on top. Serve immediately.

Notes

Keep cheese sauce warm if not serving immediately. For leftovers, store in an airtight container for up to 2 days. Reheat in the oven for 5-10 minutes for best results.
